The Japanese for taro is satoimo. It shares the same sato that begins Satomi's name, and also happens to be her favorite food. Here, she shows us how to harvest taro.

In our third course at Bistro Damontei, we served the lotus root we harvested, tossed with oil and salt and pan seared, atop a porchetta style roasted belly with mustard greens, onion and brown butter sauce, seared cabbage wedges, and smoked and roasted sweet potatoes.
